VINEYARDS
'Teso La Monja' derives from a 1,8 hectare pre-phylloxeric vineyard. Its soil composition, with a limestone level which is slightly higher than the rest of the region, provides the wine with a distinction and unique elegance.
ELABORATION
By respecting the fragile bunches, a team of 25 people de-stemmed the fruit by hand, berry by berry. The alcoholic fermentation begins in an open oak vat, followed by a manual pressing, commencing with only 25-50 cm of grapes on the surface. This results in 35-45% of the total of the grape being squeezed in a process which runs three times.
The malolactic fermentation takes place in a unique egg-shaped oak tank, the 'Ovum' which helps to spur the biorhythms of the wine and achieve a silky, elegant and interated wine. The ageing is completed in three new fine grained, medium toasted French, Bordelaise oak barrels for a minimum of 24 months.
The result is this great exclusive wine - only 837 bottles - which the critics have already raised on the podium of Spain's greatest wines.
TASTING NOTES
Great freshness, finesse, enveloping tanicity, deceitful aroma and a body slightly ethereal but resulting in everlasting memories.
